ETHIOPIA, TEGA AND TULA {ESPRESSO}

Generally the Ethiopian coffees we serve are grown by hundreds of small-hold farmers and processed at a common mill, usually a co-operative. This coffee is a bit different. After several years working for the Ethiopian Commodities Exchange (ECX), Ahadu Woubshet somehow managed to find a couple of sites comprising 500 hectares in Keffa, Ethiopia. These farms are surrounded by UNESCO forests - again, how T&T is not a UNESCO site is a mystery to me - and the farm takes its name from two nearby villages. This farm employs fifty permanent employees year-round and during peak season up to four hundred workers are employed by this farm. T&T pays above average wages for the region and is working on some social programmes, namely a school, to better serve the villages where the workers reside. In the cup expect mixed white florals - jasmine, orange blossom - citrus and a dark chocolate finish. There are many Tega & Tula lots going around Melbourne this year. This is Sublot 008-1 and it’s roasted for espresso.
