TAIWAN - DONG DING
Dong Ding oolong originated as tea that was exclusively grown in the Dong Ding mountains in central Taiwan. Now, it is a name that relates to the process and style, rather than the location. This Dung Ding is a hand picked Spring harvest, of April 2015. The estate is managed by the Chen family, at Bamboo Mt in Nantou country, Taiwan. The ball shaped leaves are processed with a medium roast profile, which is darker than most traditional Taiwanese oolongs. It is is 25-30% oxidised.
We think it should be enjoyed without milk.
For the best results, brew at 90 degrees for 3 minutes. Use a dose of 2.6 grams for 180 ml of water. The leaves can be infused multiple times, and the flavours develop and evolve well over two steeps. The tea, when brewed is a beautiful pale pink/yellow colour. The leaves are rolled dark, and green.
