Uyará is not a single-farm lot but one of Southland Merchants’ Signature Coffees: a regional selection supplied by small growers in Cerrado Mineiro. Southland adjusts contributing lots between harvests to preserve a familiar year-round profile, making consistency—not anonymity—the program’s purpose. The name nods to Tupi-Guarani heritage; the current specification lists Yellow Catuaí and Mundo Novo grown around 1,150 metres. Founded in Adelaide in 2017 by Brazilians Nadia and André, Southland connects Australian roasters with long-term producer relationships in Brazil.
Cerrado Mineiro lies in north-western Minas Gerais and comprises 55 municipalities. It was Brazil’s first coffee region to receive a Denomination of Origin, linking certified coffee to defined standards for provenance, quality and traceability. Coffee grows between roughly 800 and 1,300 metres through hot, wet summers and distinctly dry winters. These predictable seasons favour even maturation and controlled sun-drying; the regional cup typically leans toward caramel and nuts, gentle citrus acidity, moderate-to-full body and chocolate sweetness.
Uyará is naturally processed: ripe cherries are dried whole before the fruit is removed, building sugars and fruit character around the seed. Cerrado Mineiro’s dry harvest can produce a clean, rounded expression rather than an overtly fermented one. Southland’s target profile is very sweet, medium-bodied and softly acidic, centred on caramel, vanilla and milk chocolate. Expect a comforting and nuanced espresso with creamy texture, and enough balance to work black or with milk.
